Omakase

A progression defined by the market.

Season, temperature, texture and sequence guide the meal. The selection changes with the seafood arriving from Japan.

Edomae · San Juan

The ingredient leads.

Toyosu’s omakase is built around the finest ingredients available for service rather than a rigid menu. Nigiri remains central, with each course considered as part of a deliberate progression.

Restraint

Preparation is intended to support the fish—not obscure it. Seasoning, curing, aging and temperature are used with purpose.

Seasonality

Frequent arrivals from Japan allow the omakase to change continuously, including limited products that may appear for only a brief period.

Seafood

2–3 fresh deliveries each week.

Frequent arrivals allow the menu to respond to the market and season.

Selection

Typically 30+ unique cuts.

An unusually broad rotating selection across sushi and sashimi.

Wagyu

A5 Miyazaki.

Exceptional Japanese beef featured prominently alongside the seafood program.

At the counter

Precision is quiet.

The experience is intentionally focused: product, timing, temperature and hospitality without unnecessary spectacle.
