01 / Our story

A connection to Japan.
A devotion to the details.

Our story began more than a quarter of a century ago, with the first of dozens of visits to Tokyo’s famed Tsukiji fish market. When its wholesale market moved to Toyosu in 2018, that tradition found a new home. We chose the name Toyosu in tribute to that legacy, bringing our enduring connection to Japan to the table here in Condado.

Fresh fish arrives from Japan two to three times each week. The selection changes with what is available, bringing different species, cuts, and textures to the counter. Japanese seafood and A5 Wagyu anchor a menu made for discovery.

Our approach is simple: begin with the ingredient, respect its character, and serve it with care.
